A native Tennesseean, Katy got her start in restaurants while attending George Washington University and University of Miami where she received a Masters in Architecture. After graduating, she continued to serve in restaurants when she moved to Steamboat-a lifelong family vacation spot-for the fun lifestyle.
In 2007, she and her husband Brian and they opened the award-winning bistro c.v., which they ran for nearly a decade. In 2014, they opened LOW so they could enjoy a taste of the South they missed so much. They had no idea what an instant hit it would be. The continued acclaim led them to expand LOW to Denver.
In the evenings, she is in the restaurants making sure her guests experience delicious food, a warm environment and an overall feeling of happiness. Katy has an infectious laugh and is known for easily turning guests into friends.
When not in the restaurant you can find Katy on vacation, hunting for seashells with her daughter Neilly, or kicking back with a design book and a great glass of pinot noir.
